● 4 tortillas cut into smaller pieces
● 2 tbsp. vegetable oil
● 210 oz packaged frozen or fresh spinach, chopped, thawed, and properly dried
● 2 garlic cloves, thinly minced

● 28 oz chopped tomatoes
● 116 oz salsa
● 8 eggs

Step 1:
Start with baking the tortillas for around 8-10 minutes in the oven until they turn golden. Meanwhile, take a large fry pan and heat oil over medium heat. Add spinach, tomatoes, and garlic. Cook them properly until heated. Add a pinch of salt and pepper for taste.
Step 2:
Pick out a bowl, pour the blend, and keep it warm. Add salsa to the heated pan and take up the heat from medium to high. Break all the eggs into a different bowl and gently add them to simmering salsa.
